The Nationality is a kind of Category for filing recipes to describe their ethnic or national origin. Mangia!  understands Categories of Nationality, so that (for example) you can get both Sicilian and Tuscan dishes by asking for recipes that are labelled Italian (about which see the Recipe Browser and the Recipe Finder windows).
